My Mum and I have been working for ages to make the perfect brownie recipe (its been tough ;)!) . Gooey but firm, thick, super chocolatey and quick to make. We've tried many different recipes, tweeked and changed them but I think we've finally nailed it. So with out further ado here it is.....

Ingredients; 

  • 300g dark chocolate, broken into chunks
  • 250g  butter
  • 400g  brown sugar
  • 4 eggs
  • 140g plain flour
  • 50g cocoa powder
  • 50g chopped chocolate to go on top  - Feel free to sub these for what ever you'd like, raspberries, white chocolate, a swirl or two of peanut butter / salted caramel, nuts... what ever takes your fancy!

1.  Turn oven on to 180 C fan/gas 4. Line a 20 x 30cm deep sided baking tray tin with baking paper.

2.  Put the chocolate, butter and sugar in a pan and gently melt, stirring occasionally until everything has melted.  Remove from the heat and let cool for a few minutes. 

3.  Stir the eggs into the mix one by one, add the flour and cocoa, (If your adding raspberries of anything mix half of them in now). Scrape into the tray, then scatter the chocolate chunks (or swirl on the peanut butter/ salted caramel) on top. Bake on the middle shelf for 30 mins. If its still a little wobbly in the middle when you move the tin or you'd like then a little firmer, turn the oven down to 160 C and leave another 5-10 mins. Cool before slicing into squares.
